Description

Quick and easy Baked Feta pasta! A glorious fusion of creamy feta cheese melting into a bed of juicy cherry tomatoes and perfectly al dente pasta! A symphony of Mediterranean flavors that’s both comforting and refreshing!


Ingredients

  • 500g-600g cherry tomatoes (roughly 1 lb 4 oz)
  • 4 tbsp extra virgin olive oil 
  • 4 large garlic cloves 
  • 1/2 tsp Aleppo pepper or 1/4 tsp dried chilli flakes
  • salt 
  • cracked black pepper, to taste
  • 200g block feta (7 oz)
  • 400g pasta (14 oz)
  • large handful fresh basil or dill, or a mixture


Instructions

  1. Preheat the oven to 180C.
  2. In a large baking dish, toss together the cherry tomatoes, olive oil, Aleppo pepper, 1/2 tsp salt, salt a good grind of black pepper, and the garlic cloves, peeled. Place the block of feta in the middle, turning it over so it is well coated in the oil mixture. 
  3. Bake for 40-50 minutes, until the feta is slightly charred, the tomatoes and split and soft, and the garlic cloves are tender. 
  4. Halfway through cooking, cook the pasta in a large pan of boiling, salted water as per the packets instructions. Start checking for doneness around the 12 minute mark. Reserve a little of the cooking water before draining the pasta and returning to the cooking pot.
  5. Slice the basil, or chop the dill.
  6. With a fork, crush the garlic cloves before scraping everything in the baking dish into the cooked pasta. Stir, and add a splash of cooking water to help bring the sauce together to your desired consistency. If the sauce becomes too loose, simply return the hot to the heat, stirring the pasta until it has reduced. 
  7. Fold in the fresh herbs just before serving. Enjoy!

Notes

This baked feta pasta dish does not reheat well, but leftovers are delicious served cold.
